The vineyards are situated on predominantly clayish hills at an altitude of about 450 meters above sea level with a southern exposure.

Vineyard cultivation
Organic method. Resistant vine varieties offer the possibility of not carrying out any treatment or in the worst vintages only two or three organic ones without substances of chemical synthesis.

Harvest
Harvesting is done exclusively by hand, as are all the other operations in the vineyard.

Vinification
The harvested grapes are de-stemmed with open rollers to maintain the grapes intact. They are then left to ferment on the skins in terracotta amphorae and are crushed manually often. Maceration on the skins lasts well beyond fermentation for several months. After separation from the skins, the wine continues to age in the amphorae until bottling. 

Wine
It has a golden orange color, an intense and fine bouquet. It is complex on the palate with strong citrus notes, savory with a slightly tannic aftertaste. The great body and particular color are given by lengthy maceration on the skins and subsequent aging in amphorae.

Recommended food pairings
Slightly sharp cheeses, tuna, salmon, eel. Excellent as a meditation wine.
